Sweetcorn and red lentil chowder with roasted pepper salsa and smoked tofu
2 bay leaves
1 large red onion, finely chopped
1 stick celery, finely diced
1 medium carrot, finely diced
3 cloves of garlic, finely sliced
600g maris piper potatoes or any floury variety of potato, scrubbed and cubed
1 tsp turmeric
250g frozen sweet corn
1 litre vegetable stock
150g red lentils
400g cashew cream/milk (I blended 100g cashews with 300g water for more of a cashew milk consistency)
⅛ tsp ground mace
¼ tsp freshly grated nutmeg
1 tbsp fresh thyme, finely chopped
Roast pepper salsa
3 jarred roasted peppers, diced
2 tbsp olive oil
½ lemon, juiced
1 small handful fresh parsley, finely chopped
Crispy smoked tofu
250g smoked tofu, cubed
1 tsp smoked paprika
1 tsp garlic granules
1 tbsp arrowroot powder (or cornflour)
Method:
In a heavy-based saucepan, heat up 2 tbsp of olive oil.
Add the bay leaves with the onion, celery and carrot.
Gently fry for 10 minutes until the vegetables are soft and golden.
Add the garlic and fry for 2 minutes stirring regularly.
Add the potato and turmeric and fry for 1 minute.
Add the sweetcorn, red lentils and vegetable stock.
Bring to a simmer and cook for 20 minutes with the lid on but slightly ajar.
While the chowder cooks. In a medium bowl combine the paprika, garlic granules and arrowroot. Add the tofu and toss to coat, drizzle wih 2 tsp of olive oil. Air fry on 180C for about 15-20 minutes or until crispy and golden. Or roast in the oven at 200C for about 5-10 minutes longer than in the airfryer.
Add the cashew cream/milk to the chowder and stir to combine.
Add ⅓ to a ½ (depending on how chunky you want the soup) of the chowder to a blender and blend until smooth.
Add the smooth soup to the chunky soup and stir to combine. Season to taste.
For red pepper salsa simply combine all the salsa ingredients in a small bowl and season to taste.
Serve the chowder with a generous spoonful or roast pepper salsa and some crispy smoked tofu.
