Ingredients
• Lemons – ½ kg, cut into four parts (quartered)
• Salt – to taste
• Sugar – 4 tablespoons
• Black salt – 1½ teaspoons
• Carom seeds (Ajwain) – 1½ teaspoons
• Red chilli powder – 2 teaspoons
• Garam masala – 1½ teaspoons
Method
1. Put the quartered lemons into a pressure cooker and cook for 2 whistles.
2. Let the cooker cool slightly and remove the boiled lemons.
3. In a bowl, add sugar, salt, black salt, carom seeds, red chilli powder, and garam masala.
4. Mix all the ingredients well to make a uniform spice–sugar mixture.
5. Add this mixture to the boiled lemons and mix thoroughly so the lemons are evenly coated.
6. Transfer the mixture into a clean glass jar.
7. Allow it to cool completely, then close the lid.
