Chive dumpling is a type of steamed dim sum; the filling is made with prawns, winter bamboo shoot and Chinese chives. Wheat starch is used to make the pastry for wrapping; this gives a translucent appearance when cooked. Chive dumpling is a popular dim sum which can also be pan fried after steaming to give an added aroma and taste. Below is my recipe with video instruction on this dim sum.
Chive dumpling fillings
1kg raw tiger prawns (size 31/40)
250g winter bamboo shoot
1 bunch Chinese chives
Condiments
15g salt
15g msg
15g sugar
60g potato starch
Half teaspoon pepper powder
2 tablespoon garlic oil
1 table spoon sesame oil
1 tablespoon cooking wine (or a cap:)
White (wheat starch) pastry
1 bag wheat starch (tang mein) 450g
70g potato starch
400g hot water
Pinch salt and msg
Few drops of vegetable oil
Mix 250g wheat starch with potato starch in a large bowl.
Add a pinch of salt and msg.
Heat water in a kettle until boiled and stir it into the bowl of starch mix.
Cover for about 3 minutes and add in the remaining wheat starch.
knead until it all the starches are combined together and put it in a plastic bag
