We recently met up with Bill Ziegler, the Director of Operations for Norma’s Plano location. He was more than happy to teach us about the restaurant’s history, culture, and - most importantly - food.

Bill was especially excited to talk about his favorite temptation, the Texas chicken fried steak and eggs. Known as “the country breakfast,” this combo is Norma’s biggest claim to fame. It includes a hand-battered, chicken fried cut of certified Angus beef, eggs prepared any way you like, crispy hash browns, and a buttered biscuit fresh out of the oven. We couldn’t get enough of this dish! Of course, the rest of the menu was just as tempting.

From the hot and hearty pancakes to the homestyle chicken and dressing, the country cooking at Norma’s Cafe will have you thinking back to meals mama used to make. And moreover, the warm, inviting atmosphere will have you feeling right at home!

Bill and the rest of Norma’s staff like to think of the Cafe as a big family dining room. Owner and Cafeteur Ed Murph always says, “We make more than great comfort food; we make great friends and memories.”
