Lagomchef's serving up a steak and ale pie fit for an England rugby legend - Henry Slade better be hungry!

Ingredients:
750g beef
1 box flat mushrooms
1 box white mushrooms
1 onion, diced
2-3 cloves garlic, minced
2 carrots, diced
3 sticks celery, diced
3 tbsp tomato puree
1 bay leaf
3 sprigs rosemary
3 sprigs thyme
1 can (440ml) Prime Time ale
500ml beef stock
Corn flour (for thickening)
Salt and pepper
Oil for cooking
Shortcrust pastry
1 egg (for egg wash)
Method:
Season your beef and get it nice and brown in a hot pan with some oil. Once it's got that colour, take it out and let it chill for a minute. Same pan, throw in your onions, garlic, carrots and celery. Let them sweat it out until the onions go see-through and everything's starting to get soft and happy.
Chuck in the tomato paste, your herbs, and be generous with the seasoning. Pour in your stock and ale (save a sip for yourself, you've earned it), then add your beef back in. Now here's the secret - low and slow for 2 hours. Just let it do its thing.
Thicken it up with some corn flour until it's got that perfect gravy consistency. Let it cool down completely. Pro tip: you can make this filling 2-3 days ahead, which means less stress on pie day! Grab your pie pot, fill it with your gorgeous filling, slap on that shortcrust pastry lid, make it look fancy if you want, give it an egg wash, and bake at 40 minutes until it's golden and bubbling.
Serve with creamy mash and whatever veg you fancy. Absolute WINNER.
