Banana bread:
1 tbsp flax meal + 1/4 cup soy milk to make 1 flax egg
3 ripe bananas
1/4 cup almond butter
3 tbsp neutral oil (I used rice bran)
2/3 cup coconut sugar
1 cup soy milk
2 cups almond meal
1 + 1/2 cups gluten-free plain flour
1 tsp baking soda
1/4 tsp salt
Bake for 50-60 minutes, or until a knife comes out clean
Biscuit fudge:
300g coconut condensed milk
150g dark chocolate
3/4 cup vegan butter
200g gluten-free biscuits
2 tbsp cocoa powder
1/2 tsp salt
crushed pistachios (as desired)
Set in the fridge or freezer for 2 hours
