In Ghana, Sunday afternoons are meant for special meals; which mostly ends up being something with soup, something soupy, as I like to say. Fufu and goat meat light soup(aponkye nkrakra) is always a great choice. In this video, I share with you how I sneaked some extra veggies into the soup to ensure my kids eat their veggie.
Ingredients for Soup:
6 lb goat meat
1 and half large onions
1 and half habaneros
2 large carrots
1 large yellow squash
5 medium sized tomatoes
1 teaspoon tomato paste
1 teaspoon garlic paste
1 thumb size ginger
Salt to taste
Ingredients for Fufu
27 oz Cassava (1 and half of an 18 oz bag)
4 fingers of plantain
About ⅓ cup water (total to blend and rinse out blender)
