🍜 Pon Ye Gyi Noodle Stir-Fry Recipe
🧂 Ingredients (for 1–2 servings):
• Rice noodles / Shan noodles / spaghetti – 1 bundle (boiled & drained)
• Pon Ye Gyi (fermented soybean paste) – 1–2 tbsp (adjust to taste)
• Minced pork (or chicken, tofu, or mushroom for veg) – 100g
• Garlic – 4 cloves (minced)
• Shallots or onions – ½ cup (sliced)
• Chili flakes or fresh chili – to taste
• Cooking oil – 2–3 tbsp
• Fish sauce or soy sauce – 1 tbsp
• Sugar – ½ tsp (balances the saltiness)
• Spring onions / coriander – for garnish
• Optional: roasted peanuts or fried garlic for topping
🔥 Instructions:
1. Prepare noodles:
Boil your noodles, rinse with cold water, and set aside.
2. Make the flavor base:
In a pan, heat oil. Add minced garlic and shallots. Fry until golden and aromatic.
3. Add protein:
Add minced pork (or your choice of protein) and stir-fry until fully cooked.
4. Add Pon Ye Gyi:
Stir in the Pon Ye Gyi. Mix well until it coats the meat evenly. Let it sizzle for 1–2 minutes.
5. Season:
Add fish sauce or soy sauce, a bit of sugar, and chili. Stir until fragrant.
6. Mix noodles:
Add the noodles to the pan and toss well with the sauce and meat until everything is evenly coated.
7. Serve:
Plate the noodles, top with spring onions, coriander, roasted peanuts, or fried garlic.
💡 Tips:
• You can add veggies like shredded cabbage, carrots, or bok choy for extra texture.
• Pon Ye Gyi is very salty, so go easy on other seasonings.
• A squeeze of lime gives it a fresh kick!
