List of Ingredients
100g almonds
5 eggs (separated)
140g sugar
Juice of 1 lemon
140g self-raising flour
500g apples (frozen) or 6 fresh apples
Handful blackberries (or raspberries)
25g melted butter
1 tablespoon sugar
Icing sugar for dusting
Cooking Instructions
Chop and toast the almonds in a dry frying pan until golden brown.
Separate the egg yolks and whites.
Mix the egg yolks with sugar until the mixture is pale and thick.
Add lemon juice and gradually incorporate self-raising flour.
Beat the egg whites until stiff, then fold in the toasted almonds.
Gently fold the egg white mixture into the yolk and flour mixture.
Grease a 25cm baking tin with butter and dust with flour.
Pour half of the batter into the tin and layer with apples and blackberries.
Add the remaining batter on top, spreading it evenly.
Arrange the reserved apple slices on top, brush with melted butter, and sprinkle with sugar.
Bake at 160°C (fan-assisted) or 180°C (regular) for about 1 hour, but check it periodically to ensure it is golden on top and cooked in the middle.
Let it cool, dust with icing sugar, and serve.
