Ingredients

For rice

2 cups basmati rice

Water (for boiling)

2–3 green cardamoms

1 bay leaf

4–5 cloves

1 small cinnamon stick

Salt

For vegetables

1 cup mixed veggies (carrot, beans, peas, potato, cauliflower)

1 large onion, thinly sliced

2 tomatoes, chopped

1 cup thick curd (yogurt)

2 tbsp ginger–garlic paste

2–3 green chilies, slit

½ cup mint leaves

½ cup coriander leaves

Spices

1 tsp red chili powder

½ tsp turmeric

1½ tsp biryani masala

1 tsp garam masala

Salt to taste

Whole spices

1 bay leaf

4 cloves

2 green cardamoms

1 small cinnamon

1 star anise (optional)

Other

4 tbsp oil or ghee

A pinch of saffron soaked in warm milk (optional)

1 tbsp rose water or kewra water (optional)
