Ivar’s recipe for clam chowder from Ivar’s Seafood Cookbook. Delicious and easy to make!
Ingredients:
3 slices thick bacon, chopped
1/2 C diced celery
1/2 C diced onion
1/2 C diced potato
3 tbsp butter
3 tbsp flour
2 C half and half
1 6-1/2 oz can chopped clams (save the juice)
In small pan, Cook bacon until crisp. Add celery, onion and potato. Add juice from the can of clams and enough water to cover the vegetables. Bring to boil, reduce heat, cover and simmer for 20 minutes.
In separate pan, whisk together the butter and flour for 2 minutes. Add warmed half and half gradually while stirring for an additional three minutes. Then add the bacon and vegetable mixture and the chopped clams. Garnish with chopped parsley and serve immediately.
