Dhansak Masala Powder
1 tbsp coriander seeds
1 tsp cumin seeds
4 cloves
8 black peppercorns
1 teaspoon poppy seeds
1/4 tsp teaspoon mustard seeds
Pinch of fenugreek seeds
Tiny piece of nutmeg
2 dried Kashmiri red chillies
1 dried bay leaves
1 black cardamom
3 green cardamom
1 inch cinnamon stick
1 strand mace optional
1 tsp turmeric powder
Dal Prep
1/4 th (50gms) cup Tuvar Dal
1/4 th cup (50gms) Masoor Dal
1/4 th cup (50gms) Moong Dal
2 tbsp Urad Dal
2 tbsp Chana Dal
(soak all Dals together for 2 hours)
1/2 tsp Turmeric Powder
100 gms Brinjal
100gms Yellow Pumpkin
2 tbsp chopped Fenugreek Leaves
3 1/2 Cups Water + Salt to taste
Mutton Prep
500gms Mutton (marinated with 1 tsp Ginger garlic paste + 1/2 Lemon juice +Salt for 1 hour)
3 Medium onions finely chopped
2 Tomatoes finely chopped
6 Garlic cloves + 1/2 inch Ginger crushed
1 tsp Red Chilli powder
1/2 tsp Turmeric Powder
3 Tbsp Dhansak Masala Powder
Brown Rice
1 1/2 cup Basmati Rice + 3 cups of water (water will be double the ratio of rice)
4 Onions sliced
2 Green Cardamom, 1/2 Inch Cinnamon, 1 Star anise & 2 Cloves
Ghee+Oil
2 tbsp Sugar
Salt to taste
