Welcome to my new Channel Real You Can Do Anything! This is a Channel that strives to show you can do anything you put your mind to! This video shows me stopping the habit of Doordashing food and making better home cooked food.
We made tonight some Chicken, Rice, and Bean Casserole (or Southwestern Chicken & Rice)!
Prep time: 10 minutes
Cooking time: 15 minutes
Yeild: 4 servings
Ingredients:
2-4 boneless, skinless chicken breast halves (about 1 1/4 lb.)
1 cup salsa
1 package taco seasoning mix
2 cups water
2 cups minute white rice, uncooked
1 cup canned black beans, drained
OPTIONAL can of olives, drained (slice in half or in quarters)
1 cup Cheddar or Mexican style shredded cheese
Sour cream is optional
Instructions:
1. Trim off fat on chicken
2. Poach chicken (add chicken to pot and add water until the chicken is fully covered) . Put on high until boiling then take down to low and cover for 15 minutes.
3. Cut and shred chicken (dump out water that chicken was poaching in)
4. Add shredded chicken, water, salsa, and taco seasoning to pot and bring to boil and cover (let sit for a couple of minutes to bring out flavor)
5. Add rice, black beans, and olives and cover (let sit for about 5-6 minutes to let rice cook)
6. Test rice to make sure cooked. If cooked turn off stove and add cheese. Put the cover back on and let sit for a minute to have the cheese melt.
7. Enjoy!
