Mutton Rezala Recipe is a Famous Bengali Recipe made using Mutton and cooked in a white and rich gravy which gives it a Unique taste
METHOD
1.We need Mutton with bones - 1/2 kilo
2.For marination we need
Yogurt - 3 tablespoon
Ginger garlic paste - 1 tablespoon
Salt
White pepper powder - 1 teaspoon
Mix and marinate for three hours
3. Now we need to make a white paste for that we need
Cashew nuts - 10
Yogurt - 100 gram
Poppy seeds - 1 teaspoon
Grind it to a fine paste
4.Heat Clarified butter - 3 tablespoon
To it add
Cloves - 4
Cardamom - 2
Cinnamon stick - 1
Bay leaves - 2
Saute it
5.Add ground onions - 2 medium sized, saute till colour changes
6. Add ginger garlic paste - 1 tablespoon and saute till raw smell disappears
7.Add diced green chilies -3 and saute well
8.Now add white pepper powder - 1 teaspoon
and saute
9.Add the ground white paste and saute well
10.Now add the marinated mutton and roast well, then add water - 2 cups, also add
Sugar - 1/2 teaspoon
Salt as required
Garam masala powder - 1/2 teaspoon
Mix well and cook till mutton gets cooked completely
11.In another pan we need a tempering for this
Heat oil - 2 teaspoon
To it add
Dried red chilies - 4
Onion rings - 8 to 10
Saute them and add to mutton gravy
12. Mutton Rezala is ready, serve hot with roti or naan
