Chatpatti Masala Raan Recipe II Masala Cuisine II
Ingredients:
Step 1: Marinate to Remove Raw Smell
• Vinegar (Sirka): 4 tbsp
• Salt (Namak): 1 tbsp
• Ginger garlic paste (Lehsan adrak paste): 1 tbsp
• Water 4 cups or as required
• Mutton leg 2 kg
Step 2: Mutton Leg Marination
• Yogurt (Dahi): 1 cup
• Turmeric powder (Haldi powder): 1 tsp
• Red chili powder (Lal mirch powder): 1/4 tsp
• Salt (Namak): 1 tsp
• Crushed red chili (Lal mirch): 1 tbsp
• Chaat masala: 1 tbsp
• Black pepper powder (Kali mirch powder): 1/2 tsp
• Meat tenderizer: 1 tbsp
• Garam masala powder: 1 tsp
• Roasted cumin powder (Zeera powder): 1 tbsp
• Ginger garlic paste (Adrak lehsan paste): 1 tbsp
• Lemon juice: 2 tbsp
• Cooking oil: 1 tbsp
Step 3: Steam Cook Mutton Leg
• Cooking oil: 3 tbsp
• Marinated mutton leg
• Corn starch: 2 tbsp
• Water: 4-6 tbsp
• Soy sauce: 2-3 tbsp
Directions:
Step 1
In a pot, add vinegar, salt, ginger garlic paste, water, mutton leg and marinate for 1 hour.
Step 2
In a bowl, add yogurt, turmeric powder, red chili powder, salt, crushed red chili, chaat masala, black pepper powder, meat tenderizer, garam masala powder, roasted cumin powder, ginger garlic paste, lemon juice, oil and mix well.
Add prepared marination on mutton leg and rub well on both sides.
Cover and marinate overnight in refrigerator or for 16 hours for the best results.
Step 3
In a pot, heat oil.
Place marinated mutton leg, cover the lid and steam cook on low flame for 2-3 hours.
In a bowl, add corn starch, water and mix well.
Now add, corn starch slurry, soy sauce, mix and pour the mixture over the raan.
cover with lid and steam cook for 8-10 minutes.
Chatpatti Masala Raan is ready!
