SHOLA
Any left over salan 1 kg (qorma,stew,bhuna gosht ya nahari)
salt 1 tsp
red chili powder 1 tbsp
turmeric 1/2 tsp
garam masala powder 1 tsp and 1/2 tsp
spinach 750 grams washed and chopped
rice or wheat daliya soaked for 30 mins 1/2 cup
green gram soaked for 30 mins 1/2 cup
onion 1 med sliced for tempering with 1/2 cup ghee
green chilies chopped ,fried onion ,julienne ginger and lemon for garnishing
take left over curry , chicken qorma for example (but you can use beef,lamb or mutton too)
add 2 glass hot water and mix,take out all the meat and strain the remaining gravy with a sieve
discard all bones and whole garam masala
shred the meat
now pour the gravy in a big pot and add spinach,rice,lentil,and all the spices with 1 tsp garam masala powder
mix well and cover the lid
cook it for 15,20 minutes on medium low heat
stir occasionally
now add shredded meat and mix
cover again and add sufficient water to cook it properly.
cook at least 30 minutes
after 30 mins take a wooden ghota or electric beater and beat it from 2 sides coarsely ,do not over beat or it will look like a paste.
it should have some texture in it.
take a frying pan add ghee and fry onion.
take out 2 parts fried onion for garnishing and add 1 tbsp each of ginger and green chilies.
give it 30 seconds more and pour on your dish.
sprinkle 1/2 tsp garam masala powder now.
make a plate of chopped green chilies,fried onions,julienne ginger and lemons as condiments
serve it with roti or enjoy like daleem with a spoon
