【Traditional Japanese Food (Tokoroten)】

Visited a historic shop founded in 1885, loved for almost 140 years, where you can savor tokoroten made with nature's purest touch!

Here is the item I ordered this time.

Japan's Best Tokoroten $2.80

...The water used here comes from crystal-clear iwashimizu (spring water). It's so pure it can be drunk as fresh water, and it forms the delicate base flavor of the tokoroten.

This shop is also famous for its "one chopstick style" (ippon-bashi), where tokoroten is eaten with just a single chopstick. This is a traditional way of eating and is said to be proof of freshness.

The texture is pleasantly firm and springy, with a refreshing seaweed aroma. It can be enjoyed with different seasonings such as vinegar, soy sauce, shiso (perilla), and mustard, allowing you to experience a variety of flavors in one dish.

The shop is open only seasonally-this year until Monday, October 13!
