INGREDIENT LIST:
1-2 tablespoons lard
1 jar of pickled red cabbage (sweet and sour brine)
salt to taste
1 teaspoon crushed caraway
50 g bacon
1 white onion
2-4 tablespoons plain flour
sugar and vinegar for seasoning
FULL STEP BY STEP INSTRUCTIONS:
1. Pour the content of the jar with pickled red cabbage into a pot. Add salt and crushed caraway.
2. Pour water over the cabbage until it is submerged and cook for approximately 20 minutes over low heat.
3. In the meantime, heat the lard (or butter) in a pan and fry the bacon. Add the chopped onion and sauté until golden.
4. Finally, dust the bacon and onion mixture with plain flour and stir for approximately two minutes to create a roux.
5. Add the roux mixture to the pot with the cabbage and cook for a few more minutes until thickened.
6. Finally, season the cabbage with sugar and vinegar according to your taste. (Tip: For a thicker consistency without flour, grate 1 medium potato into the cabbage at the beginning.)
