Another day of clean eating that is WFPBNO and great for weight loss is what I will be sharing with you today. I have been enjoying my daily green smoothies along with clean and healthy recipes like my carrot cake pancakes and my Asian noodle stir fry. Simple and easy! Full recipes are below.
Carrot Cake Pancakes
Ingredients:
1 ¼ cup gluten free oats
1 ripe banana
1 cup grated carrots
1 T ground flax seeds
1 tsp. baking powder
½ tsp ground cinnamon
¼ tsp ground ginger
½ tsp vanilla powder or 1 tsp vanilla extract
Pinch of salt
1 ½ cups water
Instructions:
Add all the ingredients except carrots into a blender and blend till smooth. Then add carrots and mix by hand to incorporate.
Pre heat a nonstick pan or griddle @ 350 degrees
Pour batter on to griddle or pan, when bubbles have formed, and pancake is dry around the edges then flip and cook for another 1 to 2 minutes. Top with maple syrup and fruit.
Asian Noodle Stir Fry
Ingredients:
1 bell pepper cut into thin slices
3 carrots chopped
1 floret of broccoli chopped
2 head baby Bok choy chopped
½ onion chopped
5 mushrooms chopped
1 cup shredded or chopped green cabbage
2 T coconut aminos
½ tsp garlic powder
½ tsp ground ginger
½ cup frozen peas
Pinch of salt
8 ounces brown rice noodles cooked to package directions.
Ingredients for low fat peanut sauce
4 T peanut butter powder (I use PB2)
2 T coconut aminos
2 T rice vinegar
2 T maple syrup
1 tsp minced garlic
½ tsp ground ginger
½ tsp onion powder
Red pepper flakes (optional)
Water to thin sauce
Add all the ingredients into a bowl and mix till smooth and set aside
Add some water to a non-stick skillet on medium high heat add mushrooms and onions and cook for 5 minutes or so until mushrooms cook down. Add spices and coconut aminos and stir and then add veggies and a pinch of salt and cook for 5 to 7 minutes then add peas and cook until peas are warmed through. Taste and add more spices if needed. Add sauce and cooked noodles and stir and cook for another minute and noodles are coated with the sauce.
Dr. Brook Goldners green smoothie recipe
You will need a high speed blender
Fill the carafe ¾ full of greens (spinach, kale, chard, cabbage, it can be one or all of them)
Pack it in the carafe. Using your fist pack it down and when it ¾ full you can add water up to the top of the greens.
Add ¼ to ½ cup ground flax or chia seeds
For the remaining 25 % add in 2-3 very ripe bananas and frozen fruit (pineapple, mango, berries )
Then blend till smooth.
Drink the whole carafe though out your day.
