INGREDIENTS:
For the dough — First step
• 1.5 cups (360) whole milk
• 0.25 cup (57g) butter
• 1.5 cups (180g) all-purpose flour
• 2 tBsp (25g) sugar
• 1 packet (2 ¼ tsp / 7g) active dry yeast
• 1 tsp (6g) salt
Second step
• 1 cup (120g) all-purpose flour
• 1 large egg
Third step
• 2cups (240g) all-purpose flour
• Flour for dusting surfaces
• Cornmeal, for dusting muffins
• Butter, for greasing bowl
