Cyprus traditional food is based on the mediterranean cooking style and recipes and based on predominant use of vegetable, fish and meat. In this presentation at the Sofia & Andreas Traditional House, Igor Vitale interviews the staff member of the house showing slow-cooking methodologies and the internal production of many recipes like the traditional halloumi cheese, slow-cooked lamb and the macaroni pasticcio (with cheese and cinnamon).
Moreover, at the Sofia & Andreas Traditional House you can learn a lot about Cyprus culture since the traditional house can be visited and you can see traditional clothes, tools, cups for preparing the traditional Cypriot coffee.
Everything is slowly prepared with 2 ovens which represent the original cooking style in Cyprus. Our favorite? The slow-cooked lamb, simply amazing and very tender.
But few people knows that also Cypriot cuisine had Italian influence and for example include a version of pasta al forno called macaroni pasticcio (even the name is in Italian).
The halloumi cheese is excellent and also very good for the health by providing calcium and proteins.
