Tasty Tuesday from Tasmania
Scallop Pie is a favorite dish in Tasmania. Let's make it.
12 oz scallops
10 oz precooked white fish
6 oz precooked prawns
Cook scallops and mix all the above together
Use 3 large potatoes to make mashed potatoes with some butter and stock.
Add to the mixed fish 2 cups thawed frozen peas, 1 cup fresh spinach, 1 leek thinly sliced and 1t fresh thyme. Add all to a casserole dish. Pour in half cup stock and juice of one lemon and some zest of the lemon. Salt and Pepper.
Back in 360f oven (180c) for 35 min. Let rest before serving. Makes four servings.
