Gingerbread Pinecone Truffles – Recipe
Ingredients
Base
Rolled oats – ½ cup (lightly toasted)
Almond flour / oat flour – ½ cup
Nut butter (almond or peanut) – ⅓ cup
Maple syrup – 2 tbsp
Avocado oil or coconut oil – 1 tbsp
Vanilla extract – ½ tsp
Milk – 1–2 tbsp (only if needed)
Gingerbread Spice Mix
Ginger powder – 1½ tsp
Cinnamon powder – 1½ tsp
Nutmeg – ¼ tsp
Salt – a pinch
For Coating
Cornflakes – as needed
Chocolate bark – for drizzling
Powdered sugar – 1 tsp (optional garnish)
Method
Mix oats, flour, salt, and spices in a bowl.
Add nut butter, oil, maple syrup, vanilla, and milk. Mix into a soft dough.
Shape small portions into cone shapes.
