🏆 Dal Bafla Baati Recipe | Malwa Special Traditional Thali | MP & Rajasthan Authentic Style
Dal Bafla Baati (दाल बाफला बाटी) Malwa region ka ek royal traditional dish hai jo Madhya Pradesh aur Rajasthan mein khaas maukon par banaya jata hai. Yeh sirf ek recipe nahi, balki ek complete festive thali experience hai — jisme 5 mix dal ka rich tadka aur masaledar crispy baati ka perfect combination milta hai.
🥣 5 Mix Dal (पंचमेल दाल)
🧾 Ingredients for Boiling Dal
¼ cup Toor dal (तूर दाल)
¼ cup Chana dal (चना दाल)
¼ cup Hari moong dal (हरी मूंग दाल)
¼ cup Kali urad dal (काली उड़द दाल)
¼ cup Masoor dal (मसूर दाल)
⏳ Preparation:
Sabhi dals ko 1 ghante ke liye saath mein bhigo dein.
For Boiling:
Water as required (पानी)
Salt to taste (नमक)
1 tsp Turmeric powder (हल्दी पाउडर)
1 tbsp Pure ghee (शुद्ध घी)
¼ tsp Hing (हींग)
Dal ko soft aur achhi tarah se galne tak pakaayein.
🌶 Ingredients for Dal Tadka
3 tbsp Ghee or Mustard oil (घी या सरसों का तेल)
1 tsp Jeera (जीरा)
⅛ tsp Hing (हींग)
1 string Curry leaves (करी पत्ता)
2 Dry red chillies (सूखी लाल मिर्च)
2 Green chillies, finely chopped (हरी मिर्च)
1 tbsp Chopped garlic (लहसुन)
2 tsp Chopped ginger (अदरक)
2 Onions, chopped (प्याज)
½ tsp Turmeric powder (हल्दी पाउडर)
2 tsp Kashmiri red chilli powder (कश्मीरी लाल मिर्च पाउडर)
3 Tomatoes, chopped (टमाटर)
2 tsp Dhaniya-jeera powder (धनिया-जीरा पाउडर)
Tomato aur masale daalne ke baad 4–5 minute tak pakaayein.
Finishing:
1 tsp Kasuri methi (कसूरी मेथी)
½ cup Fresh chopped coriander (हरा धनिया)
Prepared tadka ko dal mein milakar kuch minute simmer karein.
🫓 Part 2: Masaledar Baati (बाटी)
🧂 Baati Masala
2 tsp Jeera (जीरा)
1 tbsp Coriander seeds, dry roasted (धनिया के बीज)
1 tsp Ajwain (अजवाइन)
1 tsp Saunf (सौंफ)
2 tsp White sesame seeds (सफेद तिल)
In sabko lightly crush karke masala tayar karein.
🧾 Dough Ingredients
3 cups Wheat flour (गेहूं का आटा)
1 cup Semolina – barik suji (सूजी)
4 tbsp Pure ghee (शुद्ध घी)
1 tsp Kasuri methi (कसूरी मेथी)
½ tsp Baking soda (बेकिंग सोडा)
Salt to taste (नमक)
2 cups Hot water (गर्म पानी)
Garam paani ke saath tight dough gundh lein.
For Frying:
Ghee or Oil (घी या तेल)

Serve garma-garam Dal Bafla Baati ke saath:
✔ Dal
✔ Crushed Baati topped with ghee
✔ Aachar (अचार)
✔ Tomato & cucumber slice salad (सलाद)
✔ Fried green chilli (तली हरी मिर्च)
✔ Lemon wedges (नींबू)
