Quick high protein homemade cocoa puff cereal- makes 3 or 4 servings 15 g protein each serving can double the ingredients for more cereal:
1/3 cup almond flour based proprietary blend or low carb baking mix
~ 2 tbs coconut flour
(add more as needed until dough is no longer sticky or wet)
1 tsp stevia powder
1/2 tsp baking powder
1/4 tsp baking soda
2 scoops whey protein powder
1 tbs coconut oil
1 tsp cocoa powder
dash of vanilla flavoring
dash of sea salt
~1/4 cup cherry cola flavored seltzer
1 medium egg yolk (can save white for the vanilla granola cereal recipe!)
Heat a nonstick pan on medium with enough coconut oil to lightly coat the pan while: combining dry ingredients and then add wet ingredients and add a bit more coconut flour if needed, until dough forms
Form cereal sized balls of dough or rough cut the dough for a quicker process but less uniform cereal (still tastes great and saves time)
Place dough pieces in the pan or use air fryer to cook until crispy outside
(~ 8 minutes while rotating the cereal pieces occasionally)
If you like your cereal crisper, can consider briefly nuking in the microwave about 30 seconds, stirring and repeat once or twice more but don't cook for too long as they easily burn
