AMLA GREEN CHUTNEY

Ingredients
1 bunch coriander leaves (approx. 100 grams), roughly chopped
2-3 pieces of amla (Indian gooseberry), deseeded and roughly chopped
1 garlic clove, chopped
½-inch piece of ginger, chopped
1 small onion, roughly chopped
2 green chillies, slit (adjust to taste)
1 tsp black salt (kala namak)
1 tsp chaat masala
1 tsp cumin seeds (jeera)
Salt to taste
2-3 ice cubes (prevents the chutney from turning dark)
1 small sprig mint leaves (pudina)
Instructions
1. Wash and roughly chop the coriander leaves (dhania)
2. Deseed and roughly chop the amla
3. In a blender, add, Coriander leaves, Amla, Onion, Green chilies, garlic, ginger, pudina, salt, kala namak, chaat masala, jeera, ice cubes
4. Blend all ingredients until smooth
5. Taste and adjust seasoning if needed

Store the chutney in an airtight container in the refrigerator for up to a week.
Tips
Ice cubes help retain the vibrant green colour of the chutney.
* Adjust the spice level by increasing or reducing the green chillies.
Add a small piece of jaggery if you prefer a slight sweetness to balance the tanginess of amla.
