What are enfrijoladas? They are just like enchiladas but instead of a chile sauce it's a bean sauce that they're dipped into.
In today's recipe video I'm sharing my untraditional way of preparing enfrijoladas with a potato and collard green filling. They can be made with regular cheese for vegetarians or with vegan cheese for vegans. Either way these enchiladas with bean sauce are amazeballs!
