Описание: In this video we describe what HACCP is and its role in food safety management.

HACCP system was introduced in the 1960s by NASA for design and manufacturing of food for spaceflights. Since then HACCP has been recognized internationally as a logical tool in the adaptation of traditional inspection methods to a modern, science-based, food safety system.

HACCP consists of a set of principles that create a framework that can be followed to conduct a risk assessment and identify critical control points (CCPs) where risk is more likely. These CCPs can then be monitored to ensure that risk is minimised and that immediate action can be taken if a hazard becomes present.
