Vegan Meatballs with Pumpkin:
Vegan Meatballs Mix:
-1 Small Pumpkin/Squash (400g - skinless after baking)
-1 Onion
-150g Mushroom
-4 Garlic
-1 Cup Breadcrumbs
-1 Cup Oats
-2 Tbsp Flaxseeds
-2 Tbsp Chickpea Flour
-150ml Boiling Water
Spice mix:
-1 Tsp Italian Herbs
-1 Tsp Paprika
-1 Tsp Turmeric
-2 Tsp Harissa Paste
-Salt and Pepper.
Recipe 2
Vegan meatballs with chickpea:
Sauteed vegetables:
1 Onion
1 Red Pepper
100g Couscous
2 Garlic.
Vegan meatballs mix:
500g Cooked Chickpeas
Sauteed vegetables with couscous
1 tbsp Chickpea Flour
1 tsp Baking Powder
-1 tbs Nutritional Yeast
2 Flax Eggs
1 tsp Italian herbs, 1 tsp Ground Coriander, 1 tsp Cayenne Pepper, Salt, Pepper
Fresh Herbs
Recipe 3
Vegan meatballs with black beans:
On the pan:
-1 onion
-2 garlic,
-100g ground almonds
-100g quinoa
-1 tsp smoked paprika, 1 tsp Italian herbs, 1 tsp ground coriander, salt and pepper.
Vegan meatballs mix:
-500g cooked black beans (2 cans)
-mix from the pan
-2 Tbsp nutritional yeast
-1 flaxegg
-1 tsp baking powder
-1/2 tsp turmeric, 1/2 tsp ancho chilli flakes, 1/2 tsp sage, 1 tsp marjoram, fresh basil, salt and pepper.
Sauce:
-250ml single soya cream
-100 vegan cheese
-1 garlic
-lemon zests
-1/2 tsp turmeric, salt, pepper
-1/2 lemon juice (optional).
For best results, keep the meatball mixture in the fridge overnight to let the flavors complement each other. These 3 vegan meatballs are also easier to shape when the mixture is cold.
