Betty demonstrates how to make Homestyle Pinto Beans. This makes a hearty meal when combined with Green Chile & Onion Cornbread Wedges from the previous video.
Homestyle Pinto Beans
1 pound dry pinto beans, sorted and soaked overnight in water (Water should cover beans with 2 additional inches above the beans.)
½ pound partially-cooked bacon, chopped
water to cover beans while cooking (Water should cover beans with an additional inch above the beans.)
1 ½ teaspoons coarse sea salt
Drain the soaked pinto beans and place in a large pot. Place bacon over top. Cover with water, with and additional inch of water over the top. Bring beans to a boil over medium heat. Reduce heat and simmer beans until tender, about 2 ½ hours. Near the end of cooking, season to taste with salt. When beans are done, transfer them to a large serving bowl. Ladle individual servings into soup bowls and serve with Green Chile and Onion Cornbread Wedges from the previous video in Betty's Kitchen. Enjoy! --Betty ♥♥♥
