Ingredients and Preparation:
Seafood Boodle
Ingredients –
250 g Tuna belly
250 g Prawns
250 g Mussels
12 dozen local Scallops or Clams
3 Large Squid
Garlic
Red chillies
Calamansi
Mama Sita’s BBQ marinade
Mama Sita’s Oyster sauce
Mama Sita’s Siling Labuyo
Butter
Salt & pepper
Prepping-
(Marinating)
1. Prepare 5 marinade containers.
2. Clean and cut tuna belly in serving sizes. Drain and place in one container.
Clean the prawns, mussels, scallops, and place in their respective containers.
Clean the squid, make sure to remove cartilage and ink sac and place in its container.
3. Rub the tuna belly with Mama Sita’s BBQ marinade.
4. To the prawns, add Mama Sita’s BBQ marinade. Let sit for 5 minutes.
5. Brush the mussels and scallops (on half shell) with Mama Sita’s BBQ marinade and top with melted butter.
6. To the squid, add calamansi and the BBQ marinade, and Mama Sita’s Siling Labuyo and let sit for 5 mins.
Grilling –
7. Set the grill on medium heat. Place the marinated tuna belly and let one side cook. Cover the grill pan if the fish cuts are thick. Baste generously with the Lemon Grass Basting Sauce.
8. Skewer the prawns individually. Place the prawns on the grill and let cook for about 5-8 minutes. Baste with the Chili Garlic Sauce.
9. Place the mussels and scallops in the oven (or broiler). Baste with oyster sauce. It would take about 4-5 minutes to cook.
10. Grill each side of the squid for 10-15 minutes. Baste with the lemongrass sauce.
11. Place the corn, and eggplants on the grill. Do not overcook.
(Basting sauce for the prawns: Chili Garlic Baste)
2 cloves garlic, crushed
1/2 tsp Mama Sita's Labuyo Hot Sauce
Juice from one kalamansi
2 Tbsp. Mama Sita’s Barbecue Marinade
2 Tbsp Cooking Oil
(Lemongrass Baste : FOR TUNA/ TANIGUE/ SQUID)
1/3 cup Water
2 lemongrass stalks, finely crushed
1 Tbsp Mama Sita’s BBQ Marinade
2 Tbsp Cooking Oil.
Sugar to taste
Fresh Garlic, Crushed
In a small saucepan combine water and lemongrass stalks and boil for 5 minutes.
Add the rest of the Ingredients and mix well.
