使饺子面筋道方法:
掌握好面和水的比例:100克面粉加45-50克室温水, 原则是:如果面团放置时间长,加水要少,如果面团放置时间短,可以多加一些水,但不能超过50克水(100克面粉)
面里加一些盐

和面(make dough):
400克中筋面粉(400 gram all purpose flour)
180-200克室温水(180-200 gram water)
1/2 茶匙盐(1/2 tsp salt)

调肉馅(dumpling filling: meat part)
1磅猪绞肉(1 lb ground pork)
1个鸡蛋(1 egg)
2汤匙橄榄油,如果加入鸡汤或者3 汤匙橄榄油, 如果加水(2 tbsp olive oil if add chicken stock into meat or 3 tbsp olive oil if add water into meat)
1杯小葱末(1 cup chopped green onion)
1/2-1 茶匙盐(1/2-1 tsp salt)
1汤匙蚝油(1 tbsp olive oil)
2汤匙酱油(2 tbsp soy sauce)
2 茶匙蒜泥,大约3瓣蒜(2 tsp mashed garlic, about 3 cloves garlic)
2 茶匙姜泥,大约1平方英寸生姜(2 tsp mashed ginger, about 1 square inch ginger)
1/2 茶匙花椒粉或白胡椒粉(1/2 tsp ground white pepper)
1 茶匙洋葱粉(1 tsp onion powder)
2 茶匙芝麻油(2 tsp sesame oil)
1/2 茶匙糖(1/2 tsp sugar)
1/2 杯鸡汤或着水,分三次加入(1/2 cup chicken stock or water, add into meat filling in three times)

调西芹部分(dumpling filling: celery part)
250 克沥干水的西芹末(250 gram drained minced celery)
2 茶匙橄榄油(2 tsp olive oil)
1/2 茶匙盐( 1/2 tsp salt)
