To make Punjabi-style palak lauki kofta, you prepare fried lauki (bottle gourd) dumplings in a rich, flavorful spinach (palak) gravy. The key is to squeeze excess water from the lauki for the koftas and use that liquid in the curry.
Ingredients
For the Koftas (Dumplings):
2 cups grated lauki (bottle gourd)
4-5 tbsp besan (gram flour), or as needed for binding
1 tsp grated ginger
1 green chili, finely chopped
1/4 tsp turmeric powder
1/2 tsp red chili powder
Salt to taste
Oil for deep frying
For the Palak Gravy:
1 large bunch palak (spinach), blanched and puréed
1 large onion, finely chopped
2 medium tomatoes, puréed
1 tbsp ginger-garlic paste
1/2 tsp cumin seeds (jeera)
1/4 tsp turmeric powder
1 tsp red chili powder
1 tsp coriander powder
1/2 tsp garam masala
1 tsp kasuri methi (dried fenugreek leaves), crushed
2 tbsp fresh cream (optional, for richness)
Oil/Ghee for cooking
Salt to taste
