Black Rice (Lotus Foods forbidden black rice )
• 1 cup black rice
• 1.75 cups water
• Butter (to finish)
• 1 cauliflower
• Olive oil
• Salt
• Paprika
• Coriander

1. Soak rise overnight in water. Rinse rice, cook at 1 ratio rice : 6 water for 5 minutes, drain, add fresh water and cook normally. This will help you remove arsenic from rice.
2. Add 1 3/4 cup of fresh water, bring to boil
3. Simmer ~29 minutes
4. Finish with butter, toss
Cauliflower Steak
1. Slice into ~1-inch steaks
2. Brush with olive oil + spices
3. Bake at 350°F for 25–30 min until crisp
Assemble:
1. Black rise, cauliflower steak, eggplant caponata, sauerkraut, and eggplant
