Our Executive Chef Anthony shows us how to make flat iron chicken with salsa verde.
Try it at home, all you'll need is:
A whole chicken / chicken breast
lemon zest 90g
sage
mint 40g
parsley 85g
basil 40g
olive oil 150g
raspberry vinegar 25g
capers 150g
Cooking instructions:
Chicken:
• When choosing chickens look for free range naturally grown birds. • Open the chicken breasts carefully as shown in the video • Pan fry with a little oil and salt over a high heat so you get a nice colour • Finish in the oven until the meat has a firm texture or the temperature of the beast has reached 74c in the middle if you have a thermometer. • Allow to rest for at least 4 minutes before serving
Salsa Verde (enough for 10 portions):
• Blend the parsley, mint, basil, olive oil, lemon zest, lemon juice, raspberry vinegar until smooth
• Add the capers on top
• Remove from the jug add the capers and season with salt only, it should be nice and bright green
Place the salsa on top of the chicken and enjoy!
