This recipe is the definition of summer on a plate! ☀️ Packed full of fresh veggies, crispy sesame tofu and dipped in the most divine worthy almond satay sauce these summer rolls are SERIOUSLY more-ish! You can find this recipe in Amy’s new cookbook Nourishing Vegan Every Day ✨

INGREDIENTS: (12-14 rolls, serves 3-4)

For the Almond Satay:
60g runny, smooth almond butter
2 tbsp tamari soya sauce
2 tbsp maple syrup
1 tbsp sesame oil
2 small garlic cloves, crushed
21/2-cm piece garlic, peeled and grated
1-2 tsp hot chilie sauce
1 lime, juiced (2 tbsp)
Salt and pepper

For the Rolls:
300g extra firm tofu
1 tbsp sesame or olive oil
1 bell pepper
1 large carrot
5-cm cucumber
120g red cabbage
100g vermicelli rice noodles
40 fresh mint leaves
12-14 rice paper sheets
