🥥 Easy & Rich Coconut Chutney | When You Have Less Coconut
This is a simple, comforting coconut chutney you can make even when coconut is limited.
Creamy, balanced, and perfect with hot idlis — no compromise on taste.

📝 Ingredients
For the chutney paste
• Grated coconut – 70 g
• Green chillies – 6 to 7
• Tamarind – pea-sized
• Salt – 1 tsp (adjust to taste)
• Water – as needed
For tempering
• Oil – 1 tbsp
• Mustard seeds – 1 tsp
• Shallots – 10, finely chopped
• Curry leaves – 10–15
Other
• Dosa batter – ¼ cup
• Water – approx. 800 ml

👩🍳 Recipe
1. Grind coconut, green chillies, tamarind, and salt into a smooth paste. Keep aside.
2. Heat oil in a heavy-bottomed kadai. Add mustard seeds.
3. Once they splutter, add shallots and curry leaves. Sauté until golden brown and crisp.
4. Remove the tempering and keep it aside.
5. In the same pan, add the ground paste, water, and dosa batter.
6. Stir continuously on medium to high flame.
7. Switch off the stove as soon as it starts foaming.
8. Add the prepared tempering back into the chutney.
9. Serve with hot idlis. Add generous chutney and drizzle ghee on top to enjoy.
