Learn how to make delicious Kolkata Style Chicken Haleem at home. This creamy and flavorful Ramadan special dish is perfect for Iftar and loved for its rich texture and aromatic spices.
In this recipe, I will show you an easy step-by-step method to cook chicken haleem using simple ingredients easily available in the market. This Kolkata style version is lighter than traditional haleem but still full of authentic flavor.
Ingredients (Serves 3–4)
Chicken & Grains
500 g chicken (boneless or with bone)
½ cup broken wheat (dalia)
¼ cup tbsp chana dal
¼ cup tbsp masoor dal
¼ cup tbsp moong da
¼ cup urad dal
2 tbsp basmati rice
Masala
2 onions (1 sliced, 1 chopped)
1½ tbsp ginger-garlic paste
½ tsp turmeric powder
1 tsp red chilli powder
1 tsp coriander powder
½ tsp cumin powder
½ tsp garam masala
½ tsp biryani masala (optional- but give kolkata's taste)
Salt to taste
2 tbsp ghee
2 tbsp oil
4–5 cups water
Soak grains
Wash broken wheat and dals.
Soak them for 1 to 2 hours
Prepare masala
Heat oil + ghee in a pan.
Fry sliced onion until golden.
Add ginger-garlic paste and cook 1 minute.
Add all dry spices mix well
then add chicken and cook till soft.
in a pressure cooker add all dal and 1 cup water and pressure cook for 3 to 4 whistles
Add chicken with stock.
Mix the cooked dalia-dal mixture.
Stir continuously 10–15 minutes until thick and creamy.
Finish
Add garam masala and biryani masala and ghee
Cook 5 more minutes on low flame.
Serve Hot With
Fried onions
Lemon juice
Mint & coriander
Green chilli
A drizzle of ghee
