richer version of traditional gujiya, especially popular during Holi and Diwali. The main filling ingredient is mawa (khoya – dried milk solids), which gives it a soft, melt-in-the-mouth texture.
🧁 Ingredients
For the outer covering:
2 cups maida (refined flour)
4 tbsp ghee (melted)
A pinch of salt
Water (for kneading)
For the stuffing:
1 cup mawa (khoya)
½ cup powdered sugar
2–3 tbsp chopped almonds & cashews
1 tbsp raisins
2 tbsp grated dry coconut
½ tsp cardamom powder
Oil or ghee for deep frying
👩🍳 Step-by-Step Recipe
1️⃣ Prepare the dough
Mix maida, salt, and melted ghee.
Rub between palms until crumbly.
Add water gradually and knead into a stiff dough.
Cover and rest for 20–30 minutes.
2️⃣ Make the filling
Lightly roast mawa in a pan on low heat until it turns slightly golden.
Let it cool completely.
Mix in sugar, dry fruits, coconut, and cardamom.
3️⃣ Shape the gujiyas
Divide dough into small balls.
Roll into small puris.
Place 1–2 tbsp filling in the center.
Fold into a half-moon shape and seal edges (use a gujiya mould or press with a fork).
4️⃣ Fry
Heat oil/ghee on medium-low flame.
Fry gujiyas until golden and crisp.
Cool completely before storing.
