*ಅವರೆಕಾಳು ಪಲಾವ್ (Avre Kaalu Pulao)*
*Ingredients:*
1 cup Avre Kaalu (fresh Hyacinth beans)
3 small glasses of rice, washed and soaked
2 large onions, 1 for blending, 1 thinly sliced
1 tomato, sliced
1 inch ginger, for blending
7 cloves of garlic, for blending
Fistful of mint and coriander leaves, for blending
6 green chilies, for blending
2 inch cinnamon, 1 inch for blending
4 cloves, 2 for blending
2 tablespoons fresh coconut
1 bay leaf
1 cardamom pod
Pinch of turmeric powder
1 teaspoon red chili powder
1.5 teaspoons coriander powder
Salt to taste
6 small glasses of water
3 tablespoons oil
*Instructions:*
1. Blend fresh coconut, green chilies, ginger, garlic, 1 onion, 1 inch cinnamon, 2 cloves, coriander leaves, and mint leaves finely.
2. Heat oil in a pressure cooker. Add the sliced onion, bay leaf, remaining cloves, cinnamon stick, and cardamom pod. Sauté until aromatic and the onions turn golden brown. Add the sliced tomato and cook until soft.
3. Add salt to taste.
4. Add Avre Kaalu, red chili powder, turmeric powder, coriander powder, and the blended mixture. Fry for 2 minutes.
5. Add the rice and 6 small glasses of water. Mix well.
6. Cover the cooker and let it whistle once. After it cools down, open the cooker and mix the pulao gently.
7. Serve hot.
