This southwestern omelet recipe is delicious! It’s full of protein, fiber and great flavor! Try this fun twist on your morning eggs today!
Ingredients:
2 eggs (cage-free, free-range)
1 tbsp coconut oil (extra-virgin)
½ c. onion, chopped
½ c. bell pepper, chopped
1 tsp chili powder
¼ tsp. black pepper
¼ avocado, sliced
½ cup black beans
¼ cup salsa
Directions:
1. In a bowl, whisk the eggs, then stir in onion and bell pepper. Season with chili powder and pepper.
2. In a medium skillet heat oil over medium heat, pour in egg mixture and cook about 3 minutes, until partially set.
3. Flip with spatula and continue cooking 2 to 3 minutes.
4. Reduce heat to low. Continue cooking 2 to 3 minutes, or to desired doneness.
5. Top with avocado slices, black beans, and salsa before serving.
