'It's NOT a cheesecake! It's a PIE!'
This is what I kept screaming at myself as I edited this vlog! Why did I think this was a recipe for a cheesecake when it has no cheese in it at all?! It's a delicious creamy, pepperminty, chocolatey pie that tastes like heaven! ^_^
Here's the recipe...

GRASSHOPPER PIE
Ingredients:
For the BASE:
75g dark chocolate
150g chocolate biscuits
For the FILLING:
2 egg whites
115g caster sugar
300ml whipping/thickened cream
1 sachet (12g) gelatine powder (w/ 115ml boiling water)
1 teaspoon peppermint extract
Green Food Colouring
Handful of choc-chips

METHOD:
Lightly grease a 23cm (9") baking tin or pie dish.
To make the base:
Melt chocolate in a heatproof bowl over simmering water.
Blitz the biscuits into a fine crumb.
Combine the crushed biscuits with the melted chocolate and evenly press into tin/dish. Chill until required.
To make the filling:
Whisk egg whites until stiff. Add the sugar to create a thick, glossy meringue.
Whip the cream to soft peaks in a seperate bowl.
Dissolve gelatine powder in 115ml boiling water and set aside to slightly cool.
Gently fold the meringue mix into the cream with a spatula, being careful not to knock too much the air out the meringue.
Add in peppermint extract, a few drops of colouring and the gelatine.
Slowly mix until all of the ingredients are well blended.
(Optional: spread a handful of choc-chips on top of the base layer.)
Pour mixture over the base, smooth and swirl the top.
Chill for at least an hour before serving.
Decorate to your choosing.
