材料 A :
3瓣 蒜头(去衣切片)
6粒 红葱头(去衣切片)
1条 红萝卜 Carrot(去皮切条状)
2砖 豆干(切条状)
300克 芽菜
2棵 青葱
3粒 冬菇(切条状)
2汤匙 油
材料 B:
12片 薄饼皮
适量 辣椒酱
材料 C:
1汤匙 麻油
1茶匙 盐
½ 茶匙 胡椒粉
1汤匙 酱油
做法:
1. 热锅,加入2汤匙油
2. 加入蒜头和红葱头,炒匀爆香
3. 加入冬菇,炒匀至冬菇变金黄色
4. 其余材料A (芽菜除外),炒匀片刻
5. 加入材料C,炒匀
6. 加入芽菜,炒匀
7. 馅料出锅,待凉
8. 在薄饼皮中央抹上一层辣椒酱,把馅料加入薄饼皮中央,将薄饼皮两端往中央折,覆盖馅料再卷起
9. 重复步骤8至馅料全用完

These traditional vegetarian snacks are wonderful as is, but can also be deep-fried if you prefer an extra-crunchy skin. Follow along with Chef Dong to add this auspicious Fuzhou classic to your New Year spread for a year filled with good fortune!

Cook Time: 15 minutes
Ingredients A:
3 cloves garlic (peeled and sliced)
6 shallots (peeled and sliced)
1 carrot (peeled and shredded into strips)
2 pieces dried bean curd (cut into strips)
300g bean sprouts
2 stalks spring onion (cut into sections)
3 pcs shiitake mushrooms (soaked and cut into strips)
2 tbsp cooking oil
Ingredients B:
12 sheets popiah skin
Adequate chili sauce
Ingredients C:
1 tbsp sesame oil
1 tsp salt
½ tsp white pepper powder
1 tbsp soy sauce
Steps:
1. Heat a wok with 2 tbsp of cooking oil
2. Add garlic and shallots, sauté until fragrant
3. Add shiitake mushrooms and stir-fry until golden brown
4. Add the remaining Ingredients A (except bean sprouts) and stir-fry briefly
5. Add Ingredients C and stir-fry to combine
6. Add bean sprouts and toss quickly
7. Remove the filling from the wok and let it cool
8. Spread a thin layer of chili sauce in the center of a popiah skin. Add a portion of the filling, fold both sides toward the center, and roll it up tightly
9. Repeat step 8 until all filling is used
