Ingreidients
For Marination
Chicken -1kg
Turmeric powder-1/4tsp
Chilli powder-1tsp
Salt
Ginger-one medium
Gralic-5
Pepper -1tsp
Fennel seeds-1/2tsp
Small onions-100gm
Big onion-1
Green chilli-4
Curry leaves -
Tomato-1 small
Green Plantain
Hot Water-2cups
Salt
For Roasting
Grated coconut-3/4cup
Small Onion-3
Garlic-2
Ginger-1 small
Green chilli-2
Fennel seeds-1/4tsp
Pepper -1/4tsp
Chilli Powder-1tbsp
Kashmiri chilli powder-1/2tbsp
Coriander Powder-2tbsp
Garam masala -1tsp
Small onion -3 for seasoning
Method
Marinate chicken pieces with turmeric powder ,salt and chilli powder ..Keep aside for 20 minutes
In a kadai heat coconut oil and add grated coconut ,ginger, garlic,green chilli, curry leaves ,pepper ,fennel seeds and small onions to golden shade ..
Then add chilli powder ,coriander powder and garam masala d saute until the raw smell goes ..
Remove from the fire and allow to cool ..
By adding enough water grind to a fine paste ..
Keep aside
Heat coconut oil in kadai add ginger-garlic-fennel -pepper paste
Saute for few seconds
Then add small onions along with green chilli d curry leaves ..
Add salt and saute for few seconds..
Then add big onion slices and saute till golden brown colour
Now add tomato pieces and cook well by closing the kadai in medium flame
Then add chicken pieces and mix well
Close the kadai and cook for 5 minutes
Now add ground masala paste and mix well ..
Close and cook
When half cooked if u want u can add potato or plantain pieces ..
Now add hot water and mix well
Close and cook ..
When done check the taste ..adjust accordingly
Finally season with small onion and curryleaves ..
So ur tasty chicken varutharacha curry is ready to serve ..Enjoy with pathiri,paratha ,chapatti ,idiyappam etc...
