Homemade Sausage
1 pound ground pork (you may use Turkey or chicken if you prefer)
1 Tablespoon rubbed sage
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon ground marjoram
1/8 teaspoon ground cayenne
pinch of crushed red pepper (more if you like your sausage spicy)
In a mixing bowl combine ingredients and mix well. As shown in the video, cut 4” squares of parchment. Using a cookie dough scoop or tablespoon, place “2 Tbsp size” portions of sausage mixture on parchment, cover with another square of parchment and press down lightly with a clear bowl or cup (so you can see how large it gets when smooshed) until it is the thickness you desire. Continue with others until all the sausage mixture has been used. Place flat sausage patties (still between pieces of parchment) in a storage container or baking sheet and place in the freezer. Once they are frozen, peel off parchment and place frozen sausage patties in a zip top bag for storage in the freezer. Use as needed, frying them in a hot skillet until browned.
