Dr. Pankaj has extensive experience in the field of postharvest and food processing. In plasma technology, high voltage is applied to a gas and it is ionized them. This causes to form the plasma phase. In this phase, a controlled reaction on a thin layer of a surface can be performed, depending on the properties of used gas and food’ surface. This reaction can cause microbial and chemical deactivation, and thus extend the shelf life and quality of a plasma treated food.
