𝐄𝐧𝐨𝐤𝐢 𝐁𝐞𝐞𝐟 𝐑𝐨𝐥𝐥𝐬
INGREDIENTS:
2 packs enoki mushrooms
500 grams beef sukiyaki
2 medium onion, sliced
chopped spring onion
Sauce:
1/2 cup water
1/4 cup soy sauce
1/4 cup mirin
2 tsp sugar
1/2 tsp dashi powder
2 cloves garlic, grated
PROCEDURE:
1. Trim off the root ends of enoki mushrooms. Rinse then pat dry. Divide into bunches.
2. On a clean work surface, lay a slice of beef. Place one bunch of the enoki at one end, then rol tightly. Do the same with the remaining slices.
3. In a bowl, prepare the sauce by mixing all the sauce ingredients.
4. In a pan, heat up some oil. Add the onions, then sauté lightly. Spread evenly on the pan.
5. Place the beef rolls, seam side down across the pan.
6. Pour the prepared sauce. Cover and bring to a simmer. Flip the enoki to cook until brown.
7. In a bowl, whisk the eggs. Then pour them over the beef rolls. Cook for a few seconds until set. Garnish with chopped spring onions. Enjoy with steamed rice.
