Philippines' very own Adobo Recipe.
In this video , I used chicken thighs- bone in & skin on.
You can reduce the baking time to 30 to 40 minutes if you are cooking skinless and boneless chicken thighs.
You can use any kind of meat in making Adobo.
Don't be confused though, Philippines has its own version of Adobo, totally different from Mexican's Adobo recipes/ spices.
The Philippine Adobo is basically any type of meat stewed in soya sauce and vinegar. I like to add a lot of onions in my adobo, as it adds so much goodness into the gravy along with the other ingredients. Plus, who doesn't love a nice caramelized onions? ☺️
I usually don't bake my adobo but on nights that I don't feel like 'saute-ing' onions and garlics, I just toss all the ingredients in a baking dish and let the oven do its magic. While you enjoy your favorite Netflix show, your dinner is cooking in the oven. Isn't it smart?! I think it's a brilliant idea!
Just don't forget to turn those thighs on the other side halfway through your cooking time and you are good to go.
Bake at 375F for 40-45 minutes. Serve with rice or mashed potatoes.
