🥣 Preparation (The Secret Step)
Clean: Wash the mushrooms thoroughly and drain well.
Marinate: In a bowl, mix mushrooms with a pinch of red chilli powder and turmeric.
Rest: Let them soak in the flavors for 30 minutes.
🔥 Cooking Method
Aromatics: Heat oil in a kadai. Sauté whole spices until they release their fragrance.
Base: Add finely chopped onions; fry until light golden. Stir in ginger-garlic paste and sauté for 2 minutes.
The Masala: Pour in tomato puree. Add red chilli powder, turmeric, cumin powder, garam masala, and salt.
Slow Cook: Cover and cook the masala for 10 minutes until the oil separates (this is key for taste!).
🥘 Finishing the Curry
Gently fold in your marinated mushrooms.
Add water as needed, cover, and simmer on low heat for 20–25 minutes until the gravy is thick and luscious.
The Final Touch: Add crushed Kasuri Methi (dried fenugreek) and a handful of fresh coriander leaves. 🌿
