Hey Guy’s! Welcome back to my channel.
In today’s video I’m going to show you how to make Rotisserie Chicken Noodle Soup.
This is a semi homemade recipe because we are using a store bought rotisserie chicken. It takes a little over an hour to pull everything together but you will really appreciate the outcome.
Rotisserie Chicken Noodle Soup:
1 Whole Rotisserie Chicken, deboned
Save and freeze the bones skin and scraps to make chicken broth later.
4 Cartons Chicken Stock
1 Large Bag Hearty Homestyle Egg
Noodles
3 Medium Carrots, peeled and sliced
3 Ribs Celery, sliced
1 Medium Onion, chopped
2 15-16 Ounce Cans Green Beans
2 Tablespoons Minced Garlic
1 Tablespoon Rubbed Sage
1 Tablespoon Adobo Seasoning
1 Stick Avocado Plant Butter
2 Tablespoons Avocado Oil
1 Heaping Tablespoon Roasted Chicken Better Than Bouillon
1/2 Cup Heavy Whipping Cream
1 Teaspoon Black Pepper
1 Teaspoon Pink Himalayan Salt
1 Tablespoon Dried Parsley
6 Tablespoons Cornstarch
** Do Not Fret **
If you don’t have chicken broth get two quart jars. Add 2 Tablespoons of chicken bouillon into each jar. Fill with water and shake until the bouillon is dissolved. Add this to your soup. Fill those empty quart jars with plain water. Pour into the soup. This is how I made my soup because I didn’t have ready made chicken broth.
First things first let’s get the onion and butter in a large saucepan and let cook over medium heat. Once the onions have cooked for about 5 minutes add the garlic. Let cook another 5 minutes.
Add the cornstarch and mix everything together. If it’s a little thick add avocado oil until it looks like a gravy roux. Let cook for 5 minutes. Add chicken broth and vegetables. Mix everything together then add all of the spices at the same time. Let for about 10 minutes.
Add the Better Than Bouillon paste and mix together again.
Let the soup cook for about 15 minutes over medium to low heat.
If you haven’t already deboned the chicken do so now and add it to the soup.
Save the chicken and vegetable scraps to make chicken broth later. Freeze *
Add the noodles and the heavy whipping cream and let everything simmer until the noodles are done.
Serve hot with fresh sweet cornbread or saltine crackers. Enjoy!
